"Shmaltz" (or "Schmaltz") is the yiddish word for rendered chicken fat, a backbone of Ashkenazi Jewish cuisine in Europe. We smoke and render chicken fat, then combine it with Bell and Evans chicken thighs and bratwurst spices to make an unbelievably delicious sausage. It's great on the grill or in the pan.
